Indian Spiced Roasted Chickpeas

Indian Spiced Roasted Chickpeas1 tsp brown sugar

¼ tsp garlic powder

1/8 tsp cayenne pepper or to taste

1 tsp ground cumin

½ tsp curry powder

½ tsp garam marsala

½ tsp ground coriander

¼ tsp sea salt

Freshly ground pepper to taste

1 tbs lemon juice

2 tbs olive oil

1 can chickpeas, preferably sodium free, rinsed, drained and thoroughly dried, skins removed.

1.  Preheat oven to 400

2.  Mix all spices up to ground pepper in a bowl with a whisk or fork. Add oil and juice and whisk in. Add chickpeas and toss well. Roast for 25-30 minutes on a baking tray lined with foil, stirring halfway through if needed. For an extra crunchy texture, turn off oven and leave in for another 15-20 minutes. Cool completely and store in an airtight container.
