Taco Tuesday

Tacos1 lb ground sirloin

2 tbs olive oil

½ large sweet onion chopped, about 1 cup

2 garlic cloves minced, about 2 tsp

¼-1/3 c triple sec

1/3c water

1 tsp salt

Freshly ground pepper

¼ tsp cayenne

2 ½tbs cumin

½ lime juiced

1 tbs cilantro

Taco shells or tortillas

1.  Cook sirloin at med heat until browned. Remove from pan and place on a plate lined with paper towel, place additional paper towel on top to absorb grease. Wipe remaining grease in pan with more paper towel.

2.  Turn heat to med low and sauté onions in olive oil until soft. Add garlic and cook until fragrant, about 30 seconds. Add triple sec and reduce down, then add cooked beef. Cook until liquid is almost reduced then add water. Cook until water is almost reduced then add salt, peper, cayenne and cumin. Cook for about 1 minute then taste for seasoning. Remove from heat and add lime juice and cilantro. Served on warmed tortillas with fixings.
