1 ¼ lb good quality ground beef, 80% lean
1 tbs olive oil
2 whole garlic cloves, sliced in half
8 oz red wine
1 egg yolk
2 tbs steak sauce
Salt and pepper to taste
6 slider buns
Handful of arugula
6 sliced tomatoes
Heat olive oil in sauté pan and add the garlic slices, cook over
med-low heat for a few minutes until garlic is fragrant. Increase
heat to medium high and add the wine, bringing it to a boil.
Reduce the heat and simmer for about 5-8 minutes until the alcohol
has cooked off and the liquid has reduced by half.
Combine beef, egg yolk, steak sauce, salt and pepper in a bowl.
Mix gently with a fork to break up the meat and combine all
ingredients. Form mixture into 6 small patties (about 3 ounces each)
and make a small indent with your thumb in the middle of each
patty. Remove garlic cloves from the pan and place patties in with
the reduced wine. Cook approximately 5 minutes on each side until
cooked to desired doneness.
Meanwhile, slice the buns in half and toast the cut sides under the broiler.
When burgers are cooked, remove from pan and place on a plate lined with paper
towel to absorb excess moisture. Place burger on bottom half of each bun and
top with arugula and tomato slices. Add the top of the bun and serve hot.
